Recipe for 2 persones

  • 2 fresh trout or perch fillets

  • 2 tablespoons olive oil

  • 2 garlic cloves, minced

  • 1 tablespoon fresh parsley, chopped

  • 1 tablespoon fresh dill, chopped

  • 1 medium tomato, sliced

  • 1 bell pepper, sliced

  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 180°C (350°F).

  2. Prepare the baking dish: Lightly grease a small clay pot or baking dish with olive oil.

  3. Season the fish: Place the fish fillets in the dish. Drizzle with olive oil, and season with salt, pepper, minced garlic, parsley, and dill.

  4. Add the vegetables: Arrange the sliced tomato and bell pepper around the fish. You can also sprinkle some extra herbs on top.

  5. Bake: Cover the dish with foil and bake for about 20-25 minutes, or until the fish is tender and fully cooked.

  6. Serve: Garnish with additional fresh herbs, and enjoy with some crusty bread on the side!
