Recipe for 2 persones

Ingredients:

  • 2 large peppers (red or green), chopped

  • 2 medium tomatoes, chopped

  • 1 small onion, chopped

  • 1 small eggplant (optional), chopped

  • 100g feta cheese, crumbled

  • 2 tbsp olive oil

  • Salt and pepper to taste

  • 1 tsp dried oregano or basil (optional)

Instructions:

  1. Prepare the vegetables: Heat olive oil in a pan over medium heat. Add the chopped onion and sauté for 3-4 minutes until soft.

  2. Cook the peppers and eggplant: Add the chopped peppers and eggplant (if using) to the pan. Cook for 5-7 minutes until the vegetables soften.

  3. Add the tomatoes: Stir in the chopped tomatoes and cook for another 5 minutes, allowing the tomatoes to break down into a sauce.

  4. Season: Add salt, pepper, and dried herbs if using. Mix well.

  5. Add the feta: Once the vegetables are tender, crumble the feta cheese over the mixture and stir it in. Cook for an additional 2-3 minutes until the feta melts and combines with the sauce.

  6. Serve: Serve hot, either as a main dish with bread or as a side dish to complement other meals.
