  • 2 fresh chorizo sausages

  • 2 crusty bread rolls or baguettes

  • 3 tbsp chimichurri sauce (store-bought or homemade)

  • Optional: sliced tomatoes, lettuce, or pickled onions

For Homemade Chimichurri Sauce:

  • 1 cup fresh parsley, finely chopped

  • 2 garlic cloves, minced

  • 2 tbsp red wine vinegar

  • 1/2 cup olive oil

  • 1/2 tsp red chili flakes (optional)

  • Salt and pepper to taste
