Ingredients:

  • For the Soup:

    • 1 cup lentils

    • 1 large carrot, diced

    • 1 large potato, diced

    • 2 ripe tomatoes, chopped

    • 1 onion, chopped

    • 2 cloves garlic, minced

    • 1 teaspoon cumin

    • 1 bunch cilantro, chopped

    • 4 cups vegetable broth

    • 2 tablespoons olive oil

    • Salt and pepper to taste

 

Instructions:

  1. Prepare the Lentils:

    • Rinse the lentils thoroughly under cold water and set aside.

  2. Sauté the Vegetables:

    • In a large pot, heat the olive oil over medium heat. Add the chopped onions and garlic, and sauté until translucent.

    • Add the diced carrots and potatoes, and continue to cook for 5 minutes.

  3. Add Tomatoes and Spices:

    • Stir in the chopped tomatoes and cumin, cooking until the tomatoes soften.

  4. Cook the Lentils:
