Ingredients for 2 tacos:

  • 2 corn tortillas

  • 6 ounces (about 170 grams) marinated pork (use an adobo sauce with achiote, vinegar, and spices for marination)

  • 2 slices of fresh pineapple, thinly sliced

  • 2 tablespoons chopped onions

  • 2 tablespoons fresh cilantro, chopped

  • 2 lime wedges

  • Vegetable oil, for cooking


Instructions:

  1. Marinate the Pork:

    • If not already marinated, prepare the pork by marinating it in an adobo sauce made with achiote paste, vinegar, and spices for at least 1 hour or overnight for best results.

  2. Cook the Pork:

    • Heat a small amount of vegetable oil in a skillet over medium-high heat.

    • Add the marinated pork to the skillet and cook until it is browned and cooked through, about 5-7 minutes.

    • Remove the pork from the skillet and chop it into small pieces.

  3. Warm the Tortillas:

    • In the same skillet, lightly warm each corn tortilla for about 30 seconds on each side until they are soft and pliable.

    • Place half of the chopped pork onto each warmed tortilla.

    • Add a slice of fresh pineapple on top of the pork on each tortilla.

    • Sprinkle 1 tablespoon of chopped onions and 1 tablespoon of cilantro over the top of each taco.
