Ratatouille Recipe for 2

🛒 Ingredients:

  • 1 small eggplant, diced 🍆

  • 1 zucchini, sliced 🥒

  • 1 bell pepper, chopped 🌶

  • 2 tomatoes, diced 🍅

  • ½ onion, finely chopped 🧅

  • 2 cloves garlic, minced 🧄

  • 2 tbsp olive oil 🫒

  • ½ tsp thyme 🌿

  • ½ tsp oregano

  • Salt & pepper to taste

👨‍🍳 Instructions:

1️⃣ Sauté the Vegetables:

  • Heat olive oil in a pan.

  • Add onions & garlic, sauté for 2 min.

  • Add eggplant & bell pepper, cook for 5 min.

2️⃣ Add the Tomatoes & Zucchini:

  • Stir in tomatoes & zucchini.

  • Add thyme, oregano, salt & pepper.

  • Simmer on low heat for 20 min, stirring occasionally.

3️⃣ Final Touch:

  • Drizzle with extra olive oil before serving.

  • Garnish with fresh herbs.
