Ingredients for 2 persones:

  • 1/2 cup dried black-eyed peas

  • 2 cups water

  • 1/2 onion, chopped

  • 1/2 green bell pepper, chopped

  • 1 clove garlic, minced

  • 1/2 cup long-grain white rice

  • 1 cup vegetable or chicken broth

  • 1/2 bay leaf

  • Salt and pepper to taste

  • Dash of hot sauce (optional)

  • Chopped green onions for garnish

Instructions:

  1. Rinse the black-eyed peas under cold water and remove any debris or stones.

  2. In a small pot, combine the black-eyed peas and water. Bring to a boil, then reduce heat to low and simmer for about 30-40 minutes, or until the peas are tender but not mushy. Drain and set aside.

  3. In the same pot, heat a tablespoon of oil over medium heat. Add the chopped onion, bell pepper, and garlic, and sauté until softened, about 3-4 minutes.

  4. Stir in the cooked black-eyed peas, rice, broth, bay leaf, salt, pepper, and hot sauce (if using). Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked and most of the liquid is absorbed.

  5. Remove the bay leaf and fluff the Hoppin' John with a fork. Taste and adjust seasoning if needed.

  6. Serve hot, garnished with chopped green onions if desired. Enjoy your meal!
