Hungarian Catfish Paprika Stew (Serves 2)

Ingredients:

  • 2 catfish fillets (about 300-400g)

  • 1 medium onion, finely chopped

  • 1 tablespoon sweet paprika (Hungarian paprika preferred)

  • 2 medium tomatoes, chopped

  • 1 garlic clove, minced

  • 2 tablespoons olive oil or butter

  • Salt, to taste

  • Fresh parsley, chopped (optional, for garnish)

  • 1/2 cup water or fish stock (optional for extra depth of flavor)

Instructions:

  1. Heat olive oil or butter in a large pan over medium heat.

  2. Sauté the onion until soft and golden, about 4-5 minutes.

  3. Add garlic and paprika, stirring to combine for 1 minute, making sure the paprika doesn't burn.

  4. Stir in tomatoes and cook for 5 minutes until they soften.

  5. Add the catfish fillets, salt, and a little water or fish stock if desired. Simmer for 10-12 minutes, turning the fish gently until cooked through and tender.

  6. Garnish with fresh parsley and serve warm, ideally with dumplings, potatoes, or crusty bread.
