Hungarian Vegetable Stew For 2 Persones

Ingredients:

  • 2 bell peppers (any color), sliced

  • 2 medium tomatoes, chopped

  • 1 onion, sliced

  • 1 tablespoon paprika (preferably Hungarian sweet paprika)

  • 2 tablespoons olive oil

  • Salt, to taste

  • 1 garlic clove (optional), minced

  • Fresh parsley (optional), for garnish

Instructions:

  1. Heat olive oil in a large pan over medium heat.

  2. Sauté the onion until soft and translucent, about 3-4 minutes.

  3. Add garlic (if using) and sauté for another minute.

  4. Stir in paprika, then add the bell peppers. Cook for about 5-6 minutes until they start to soften.

  5. Add the tomatoes, stir, and let everything simmer for about 10-12 minutes, until the vegetables are tender.

  6. Season with salt to taste and garnish with fresh parsley if desired.
