Ingredients for 2 persones :

  • 1 lobster (about 1 1/4 pounds)

  • 2 cups milk

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

  • Salt and pepper to taste

  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Cook the lobster: Fill a pot with water and bring it to a boil. Add the lobster and cook for about 8-10 minutes until it turns bright red. Remove the lobster from the pot and let it cool slightly.

  2. Once the lobster is cool enough to handle, remove the meat from the shell. Chop the lobster meat into bite-sized pieces and set aside.

  3. In a saucepan, melt the butter over medium heat. Stir in the flour to make a roux, cooking for about 1-2 minutes until lightly golden.

  4. Gradually whisk in the milk, stirring constantly to prevent lumps. Bring the mixture to a simmer and cook for a few minutes until it thickens slightly.

  5. Add the chopped lobster meat to the milk mixture and simmer for an additional 5-7 minutes until the lobster is heated through and the stew has reached your desired consistency.

  6. Season the stew with salt and pepper to taste.

  7. Serve the lobster stew hot, garnished with chopped fresh parsley if desired.
