Ingredients:

For Jollof Rice:

  • 1 cup long-grain rice, rinsed

  • 2 medium tomatoes, blended

  • 1/2 onion, chopped

  • 1/2 bell pepper, chopped

  • 1 tbsp vegetable oil

  • 1 tsp thyme

  • 1 tsp curry powder

  • 1 tsp ginger-garlic paste

  • 1 tbsp tomato paste

  • 1 cup chicken broth

  • Salt and pepper, to taste

For Fried Chicken:

  • 2 pieces chicken (drumsticks or thighs)

  • 1/2 cup flour

  • 1 tsp paprika

  • 1/2 tsp garlic powder

  • Salt and pepper, to taste

  • 1/2 cup vegetable oil (for frying)

Instructions:

  1. Make Jollof Rice:

    • Heat vegetable oil in a pot over medium heat. Add chopped onions and bell peppers, sauté until soft.

    • Add blended tomatoes, tomato paste, and ginger-garlic paste. Cook for 5-7 minutes, stirring occasionally.

    • Add thyme, curry powder, and salt. Mix well, then add rice and chicken broth.

    • Stir, cover, and simmer for 20-25 minutes on low heat until the rice is fully cooked.

  2. Prepare Fried Chicken:

    • Season chicken with salt, pepper, and paprika.

    • Coat the chicken pieces in flour, shaking off excess.

    • Heat oil in a frying pan over medium heat. Fry the chicken for 8-10 minutes on each side until golden and crispy.

    • Remove and drain on paper towels.

  3. Serve:

    • Serve the Jollof rice with the crispy fried chicken on top or beside.
