2 pieces chicken (drumsticks or thighs)

1/2 cup flour

1 tsp paprika

1/2 tsp garlic powder

1/2 cup vegetable oil (for frying)
Instructions:

Make Jollof Rice:

Heat vegetable oil in a pot over medium heat. Add chopped onions and bell peppers, sauté until soft.

Add blended tomatoes, tomato paste, and ginger-garlic paste. Cook for 5-7 minutes, stirring occasionally.

Add thyme, curry powder, and salt. Mix well, then add rice and chicken broth.

Stir, cover, and simmer for 20-25 minutes on low heat until the rice is fully cooked.
