Ingredients:

  • 2 cups shredded cabbage

  • 1 medium apple (preferably a tart variety like Granny Smith)

  • 1 small carrot, grated

  • 2 tbsp olive oil

  • 1 tbsp apple cider vinegar (or white wine vinegar)

  • Salt and pepper to taste

Instructions:

  1. Shred the cabbage finely and place it in a large bowl.

  2. Grate the carrot and add it to the cabbage.

  3. Core and slice the apple into thin matchsticks or small cubes, then add to the bowl.

  4. In a small bowl, whisk together the olive oil, vinegar, salt, and pepper to create the dressing.

  5. Pour the dressing over the cabbage mixture and toss well until everything is evenly coated.
