Recipe for 4 pieces of Skolebrød

Ingredients:

For the Bun:

  • 250g all-purpose flour

  • 30g sugar

  • 1/2 tsp salt

  • 1 tsp dry yeast

  • 150ml milk (lukewarm)

  • 50g butter (softened)

  • 1 egg (for the dough)

  • 1/2 tsp vanilla extract

For the Custard Filling:

  • 1 egg

  • 1 tbsp sugar

  • 2 tbsp all-purpose flour

  • 150ml milk

  • 1 tsp vanilla extract

For the Topping:

  • 50g shredded coconut

  • 1 tbsp melted butter (for brushing the buns)

Instructions:

  1. Make the Bun Dough:

    • In a bowl, mix the flour, sugar, salt, and dry yeast. Add the lukewarm milk, softened butter, egg, and vanilla extract. Mix until combined and knead into a smooth dough.

    • Cover the dough with a clean cloth and let it rise in a warm place for about 1 hour or until it doubles in size.

  2. Prepare the Custard:

    • In a saucepan, whisk together the egg, sugar, flour, and milk. Cook over medium heat while stirring continuously until the mixture thickens into a custard. Remove from heat and stir in vanilla extract. Let it cool.

  3. Shape the Buns:

    • Once the dough has risen, divide it into 4 equal portions. Shape each portion into a ball and place them on a baking sheet lined with parchment paper.

    • Flatten each ball slightly to form a bun. Using your fingers, make a small indentation in the center of each bun.

  4. Fill with Custard:

    • Spoon a generous amount of cooled custard into the center of each bun.

  5. Bake the Buns:

    • Preheat the oven to 180°C (350°F). Bake the buns for about 15-20 minutes or until they are golden brown.

    • While the buns are baking, brush them with melted butter as soon as they come out of the oven. Then, sprinkle the shredded coconut on top.
