Ingredients:

  • 1 large portobello mushroom cap

  • 1 tablespoon balsamic vinegar

  • 1 clove garlic, minced

  • 1/2 teaspoon dried thyme

  • Salt and pepper to taste

  • 1 teaspoon olive oil

  • 1 whole grain sandwich bun

  • 1 tablespoon mayonnaise

  • 1 lettuce leaf

  • 1 slice tomato

  • 2 slices avocado

  • Optional: cheese slice of your choice (such as provolone or Swiss)

Instructions:

  1. In a small bowl, whisk together the balsamic vinegar, minced garlic, dried thyme, salt, and pepper.

  2. Clean the portobello mushroom cap and remove the stem. Place it in a shallow dish and pour the balsamic vinegar marinade over the mushroom, making sure it's well coated. Let it marinate for about 15-20 minutes.

  3. Heat a grill pan or skillet over medium-high heat. Brush the olive oil over the surface.

  4. Place the marinated portobello mushroom cap on the grill pan or skillet, gill side down. Cook for about 4-5 minutes on each side, or until tender and slightly charred.

  5. While the mushroom is grilling, toast the sandwich bun until lightly golden.

  6. Spread the mayonnaise on one side of the toasted bun. Place the lettuce leaf on top of the mayonnaise.

  7. Once the mushroom is cooked, place it on top of the lettuce leaf.

  8. Add the slice of tomato and avocado on top of the mushroom.

  9. If using cheese, place it on top of the avocado.

  10. Finally, place the other half of the toasted bun on top to complete the sandwich.

  11. Serve the Grilled Portobello Mushroom Sandwich immediately and enjoy!
