Ingredients:

  • For the Pupusas:

    • 2 cups masa harina (corn flour)

    • 1 1/2 cups water

    • 1 cup shredded cheese (quesillo, mozzarella, or a blend)

    • 1 cup refried beans

    • 1 cup cooked pork (chicharrón), finely chopped

  • For the Curtido:

    • 1/2 head cabbage, shredded

    • 1 carrot, grated

    • 1 small onion, thinly sliced

    • 1 cup boiling water

    • 1/2 cup white vinegar

    • 1 teaspoon dried oregano

    • Salt to taste

  • For the Tomato Salsa:

    • 2 ripe tomatoes, chopped

    • 1 small onion, chopped

    • 1 clove garlic, minced

    • 1 tablespoon vegetable oil

    • Salt to taste


Instructions:

  1. Prepare the Curtido:

    • Place the shredded cabbage, grated carrot, and sliced onion in a bowl.

    • Pour boiling water over the vegetables and let sit for 5 minutes. Drain well.

    • Add vinegar, oregano, and salt. Mix well and refrigerate for at least 2 hours.

  2. Prepare the Tomato Salsa:

    • In a saucepan, heat the vegetable oil over medium heat.

    • Add the chopped tomatoes, onion, and garlic. Cook until the tomatoes are soft.

    • Blend the mixture until smooth and season with salt. Set aside.

  3. Make the Pupusas:

    • In a large bowl, mix masa harina and water to form a dough.

    • Divide the dough into 8 equal balls. Flatten each ball into a thick disk.

    • Place a spoonful of cheese, beans, and pork in the center of each disk. Fold the edges over the filling and flatten again to form a thick pancake.

  4. Cook the Pupusas:

    • Heat a griddle or skillet over medium heat. Cook the pupusas for 2-3 minutes on each side until golden brown and slightly crispy.

  5. Serve:

    • Serve the pupusas hot with curtido and tomato salsa on the side. Enjoy your taste of El Salvador’s street food right at home!
