Ingredients (for 2 servings):
For the Marinade:
500 g lamb or goat, cut into pieces
½ cup yogurt
1 tsp ginger paste
1 tsp garlic paste
½ tsp salt

For the Curry:
1 tbsp ghee
1 large onion, finely sliced
2-3 Kashmiri red chilies, deseeded and soaked in water
½ tsp ground cardamom
½ tsp ground cloves
½ tsp ground cinnamon
1 bay leaf
A pinch of asafoetida
Salt to taste


Instructions:

Prepare the Marinade:
Marinate the Meat: In a large bowl, combine yogurt, ginger paste, garlic paste, and salt. Add the meat pieces and marinate for at least 2 hours, preferably overnight.

Prepare the Curry:
Cook the Onions: Heat ghee in a large pot. Add sliced onions and sauté until golden brown.

Blend the Spices: In a blender, combine soaked Kashmiri chilies and a bit of water to make a paste. Add this paste to the pot and cook for a few minutes.

Add Spices: Add ground cardamom, cloves, cinnamon, bay leaf, and asafoetida to the pot. Stir well to combine the spices.

Assemble the Rogan Josh:
Cook the Meat: Add the marinated meat to the pot. Cook on high heat for 5-7 minutes, stirring frequently to prevent sticking.

Simmer: Reduce the heat, cover the pot, and let it simmer for 1-2 hours until the meat is tender and the sauce has thickened. Add water if necessary to achieve the desired consistency.
