Ingredients:

For the pie crust:

  • 1 1/4 cups all-purpose flour

  • 1/2 teaspoon salt

  • 1/2 cup unsalted butter, cold and cut into small pieces

  • 2-4 tablespoons ice water

For the filling:

  • 1 cup all-purpose flour

  • 3/4 cup dark molasses

  • 1/2 cup boiling water

  • 1/2 teaspoon baking soda

  • 1/2 cup packed brown sugar

  • 1/4 teaspoon salt

  • 1 large egg, beaten

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. Prepare the pie crust:

    • In a mixing bowl, combine the flour and salt.

    • Add the cold butter pieces and cut them into the flour using a pastry cutter or fork until the mixture resembles coarse crumbs.

    • Gradually add the ice water, 1 tablespoon at a time, mixing until the dough comes together.

    • Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

  3. Roll out the chilled dough on a floured surface to fit a 9-inch pie dish. Press the dough into the bottom and sides of the dish, and trim any excess dough hanging over the edges.

  4. Prepare the filling:

    • In a small bowl, dissolve the baking soda in the boiling water.

    • In a separate bowl, mix together the flour, dark molasses, brown sugar, and salt.

    • Stir in the beaten egg until well combined.

    • Gradually add the hot water mixture to the molasses mixture, stirring until smooth.

  5. Pour the filling into the prepared pie crust.

  6. Bake the pie in the preheated oven for 10 minutes, then reduce the oven temperature to 350°F (175°C) and continue baking for an additional 30-35 minutes, or until the filling is set and the crust is golden brown.

  7. Remove the pie from the oven and allow it to cool completely on a wire rack before serving.

  8. Once cooled, slice and serve the Shoofly Pie as desired.
