Tom Yum Recipe for 2 Persons

Ingredients:

  • 500 ml chicken or seafood stock

  • 1 stalk lemongrass (cut into 3-inch pieces, smashed)

  • 2 slices galangal

  • 2 kaffir lime leaves (torn)

  • 1-2 fresh chilies (sliced)

  • 1 tbsp chili paste (Nam Prik Pao)

  • 150 g shrimp (peeled and deveined)

  • 1 cup mushrooms (sliced)

  • 1 tbsp fish sauce

  • Juice of 1 lime

  • Fresh coriander for garnish

Instructions:

  1. Prepare the Stock: Bring the stock to a boil. Add lemongrass, galangal, kaffir lime leaves, and chilies. Simmer for 5 minutes to infuse the flavors.

  2. Add Main Ingredients: Stir in the chili paste, then add mushrooms and shrimp. Cook until the shrimp turn pink.

  3. Season: Add fish sauce and lime juice to taste. Adjust the balance of salty, sour, and spicy flavors as needed.

  4. Serve: Garnish with fresh coriander and serve hot.
