  • 1 large egg

  • 1/2 teaspoon vanilla extract

  • 1/4 cup buttermilk

For the filling:

  • 4 tablespoons unsalted butter, softened

  • 1 cup powdered sugar

  • 1/2 teaspoon vanilla extract

  • 2 tablespoons marshmallow fluff or marshmallow cream

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.

  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and beat until well combined.

  4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, until everything is incorporated and you have a smooth batter.

  5. Drop spoonfuls of batter onto the prepared baking sheet, leaving some space between each one. You should get around 8-10 rounds depending on the size.
